 Before you do anything, make sure your oven is preheating to 350°F (175°C). It’s always a good idea to have your oven at the right temperature so the brownies bake evenly.

Blend the Cottage Cheese

 Take your cottage cheese and blend it until it’s super smooth. You don’t want any chunks, so use a food processor or blender for this. 

This will make sure the cottage cheese melts right into the batter, giving your brownies that perfect texture.

Mix the Wet Ingredients

In a spacious bowl, vigorously whisk the melted butter with granulated sugar and brown sugar until well combined. 

You’re looking for a smooth, glossy mixture. Then, beat in the eggs one at a time and add the vanilla extract. You want everything to come together nice and smooth.

Add the Cottage Cheese

 Now, fold in the blended cottage cheese. It’ll seem a bit strange at first, but trust me, this is what’s going to make these brownies next level.

Combine the Dry Ingredients

 In a different bowl, carefully sift the flour, cocoa powder, baking powder, and salt.

 Melt about half of the chocolate chips (the ones you’ll mix into the batter) in the microwave or on the stove.

  • ½ cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (90g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (90g) chocolate chips, melted
  • ½ cup (90g) chocolate chips, for mix-in (optional)

Instructions

  1. Set your oven to 350°F (175°C) beforehand to guarantee consistent and even baking.
  2. Blend the cottage cheese until smooth, using a food processor or blender to avoid lumps. This will give your brownies a creamy texture.
  3. In a spacious bowl, whisk the melted butter, granulated sugar, and brown sugar until smooth and well combined. 
  4. Gradually beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract.
  5. Fold in the blended cottage cheese, mixing it into the wet ingredients.
  6. In another bowl, sift the flour, cocoa powder, baking powder, and salt together to create a light, uniform mixture. 
  7. Gradually mix this into the wet ingredients, stirring until just combined.
  8. Melt half of the chocolate chips and fold them into the batter for a rich flavor.
  9. Add any remaining chocolate chips for extra texture, folding them gently into the mix.
  10. Transfer the batter to a greased 9x9-inch pan and smooth the top. 
  11. Bake for 25 minutes, then test with a toothpick, if it comes out with a few moist crumbs, it's ready.
