Let’s break it down, step by step, so you can create these beauties in your own kitchen. Trust me, it’s easier than you think, and totally worth it.

Prep Your Oven and Pan

Start by preheating your oven to 350°F (175°C). Line your  8×8 baking pan with parchment paper, and let it hang over the sides a bit, it’ll make lifting those brownies out a breeze once they’re done. No hassle, just yum!

Melt the Chocolate and Butter

Grab a microwave-safe bowl and toss in your semi-sweet chocolate chips and unsalted butter. Microwave them in short bursts of 15 seconds, stirring in between, until it’s smooth and melty. 

Give it a few minutes to cool down slightly. We want it warm, not hot, before we move on to the next step.

Whisk in the Good Stuff

Now it’s time to make the magic happen. In a big bowl, pour in that warm chocolatey goodness. Add in your eggs, dark cocoa powder, espresso powder, granulated sugar, and a splash of vanilla. 

Stir everything together until it’s all perfectly combined. You should be looking at a rich, shiny chocolate batter that smells absolutely heavenly.

Fold in the Flour

4 Mistakes to Avoid When Making Mint Brownies

Freezing (For Ultimate Longevity)

Ingredients

The Brownies Base:

  • 3 large eggs
  • 1 ½ cups granulated sugar
  • ¾ cup butter, melted
  • ½ tsp espresso powder
  • 1 cup all-purpose flour
  • ⅔ cup semi-sweet chocolate chips
  • ½ cup dark cocoa powder
  • 1 tsp vanilla extract

The Mint Layer:

  • 3 oz cream cheese, softened
  • 2 ½ Tbsp butter, softened
  • 2 Tbsp heavy whipping cream
  • ½ tsp peppermint extract
  • 3 cups powdered sugar
  • 2 drops green food coloring

The Ganache:

  • 5 Tbsp butter
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line your 8×8 baking pan with parchment paper, allowing it to hang over the edges. This makes it super easy to lift the brownies out once they’re baked.
  2. In a microwave-safe bowl, combine the semi-sweet chocolate chips and butter. Microwave in short 15-second bursts, giving it a good stir in between, until it’s nice and smooth. Let it cool a bit before moving on to the next step!
  3. In a large bowl, whisk together the warm chocolate mixture with eggs, dark cocoa powder, espresso powder, sugar, and vanilla until everything is well combined. You should have a rich, glossy batter that smells amazing.
  4. Fold in the flour gently until just combined. Don’t overmix, keeping the batter smooth is key for fudgy brownies.
  5. Gently pour the batter into your prepared pan and spread it out nice and even. Bake for about 25-30 minutes, or until a toothpick comes out with a few moist crumbs. 
  6. Let the brownies cool completely in the pan, which should take around an hour.
  7. While the brownies cool, make the mint frosting. In a mixing bowl, beat together softened butter, cream cheese, and heavy cream. 
  8. Add the peppermint extract and a couple of drops of green food coloring. Gradually sift in the powdered sugar, continuing to mix until smooth and fluffy.

  11. Refrigerate the brownies for about an hour, allowing the ganache to set. Once it’s firm, slice and enjoy!
